This delicious purple cabbage soup is comforting, chunky, and brimming with wholesome goodness. You can also whip it up using green cabbage.

Take a large pot, heat olive oil over medium heat, add ginger and garlic and cook for 1 minute.
Then add onion, carrot, celery and the mentioned seasonings. Stir and cook for 10 minutes or until onions softens.
Now add tomatoes and cook for another 4 minutes.
Mix in chicken or veggie bouillon, white beans and hot water. Bring to a boil, then simmer for 5 minutes.
Stir in vinegar, followed by purple cabbage and simmer for 6 minutes.
Then pour cornstarch slurry and boil for 2 minutes.
Turn off the heat, then add chopped cilantro.
Also add some lime juice and mix. Serve and enjoy!
