This purple cabbage slaw has no mayo. And is tossed in a citrusy peanut dressing that's so good you'll want to make it on repeat.

Combine julienned/shredded cabbage, carrot and chopped mint in a large bowl.
Blitz all the dressing ingredients in a blender or food processor.
Add the blended dressing to the slaw mix.
Mix them together. Top with a sprinkle of chopped mint. Enjoy!
