1cup(237ml)low sodium club soda - chilled (Note B for substitutes)
1scoopvanilla ice cream
1maraschino cherry - optional. (Note C)
some crushed ice or ice cubes
Instructions
In a tall glass, add some crushed ice or ice cubes.
Pour melon syrup and then chilled club soda. Give it a mix. Taste the drink and add more syrup if desired.
Add additional ice at this point if needed. Some ice needs to remain near the surface to support the floating ice cream.
Finally, place a scoop of vanilla ice cream and garnish with a maraschino cherry.
Serve immediately with a tall (long handle) spoon and a straw. Enjoy!
Notes
Note A: Melon syrup — this recipe calls for 1:4 ratio of syrup to soda but follow the instructions on your syrup bottle for best results. If unable to find melon syrup, use ready-to-drink Japanese melon-flavored soda. Omit club soda in this case. Refer to the ingredient notes in blog post above for melon syrup-related tips and information on where you may find it. Note B: Club soda — low sodium club soda is preferred choice as it doesn't alter the taste of the drink as much as the regular one. You can also use seltzer water, sparkling water, or carbonated water instead. Remember to chill the soda in the refrigerator before use.Note C: Maraschino cherry — these can be found in big grocery stores, typically in baking or canned/jarred food aisles, or in the dessert topping section.
