½cup(10g)fresh mint leaves, chopped - around 50 to 60 leaves
For the dressing
3tablespoonspeanut butter - Note B
3tablespoonsfresh lime juice - 1 large lime. Or fresh lemon juice
2tablespoonsdistilled white vinegar - Note C
2tablespoonsolive oil - or any neutral-tasting vegetable oil
2clovesgarlic
1pieceof ginger - piece size: 1 inch
½cup(10g)fresh mint leaves - around 50 to 60 leaves
¼teaspooncayenne pepper - or crushed red pepper flakes
¾teaspoonsalt
2teaspoonssugar - any type
3tablespoonswater
Instructions
In a large bowl, combine the sliced purple cabbage, julienned / shredded carrot and chopped mint. Reserve a few chopped mint leaves for garnish.
Then in a blender or food processor, add all the dressing ingredients. Blend until its smooth and creamy. See Note D below if you don't have either of these appliances.
Pour the blended dressing over the slaw veggies and mix well. Use less dressing if you prefer your slaw a bit dry.
Garnish with the reserved chopped mint – and dig in!
Notes
Note A: Cabbage – Green cabbage works great as a substitute, but napa and savoy cabbages will be fine too. Not sure how to cut the cabbage for slaw? Here's a guide to help you.Note B: Peanut butter – Natural, creamy, crunchy - all textures work fine. Provided it isn't labeled "peanut spread" because that usually isn't the same as butter. Don't have peanut butter? Use 2 tablespoons of unflavored, dry roasted peanuts (salted or unsalted) for every tablespoon of butter. If using salted ones, hold off on adding any salt; taste the dressing, then adjust. Give that dressing a good blitz to avoid any peanut bits.Note C: Vinegar – Apple cider vinegar or rice vinegar can be used instead but might give the dressing a slightly different taste.Note D: No blender or food processor – If you don't have these gadgets, just finely mince ginger, garlic, and mint leaves. Toss in the other dressing ingredients and give it a good whisk until everything's nicely combined.
